Spicy Pesto Pasta


Pesto is one of those condiments that most everyone seems to love—it’s great to mix with mayo and use on sandwiches, spread on bread with some tomatoes and mozzarella or, of course, simply add to a big plate of cooked noodles. This pesto is different from the typical parmesan-pine nut-basil iteration. It’s full of vitamins (thanks to several handfuls of spinach and arugula) has a nice, nutty flavor (due to the walnuts and asiago cheese) and comes with a kick (that’s the jalapeño talkin’). This recipe makes a lot of pesto, so you’ll have plenty leftover to serve atop fish, chicken, pizza… I even sometimes add it to mashed potatoes.
